Test plan:
1. Set up live_events in Canvas
2. Monitor the live_events stream using
`script/tail_kinesis`
3. Create and grade on a student assignment
4. Verify that there are user_id and assignment_id
fields on the `grade_change`, `submission_created`,
and `submission_updated` events
